Ingredients
- 150 g Halal sucuk (Turkish spicy sausage)
- 4 whole Eggs
- 120 g Bell peppers (mixed)
- 80 g Onion
- 80 g Tomato
- 15 g Butter
- 3 g Salt and black pepper
Method
- 1
Slice sucuk into thin rounds. Heat a large skillet over medium-high heat and cook sucuk until edges are crispy and fat renders out, about 5 minutes. Transfer to a plate.
- 2
In the same pan with remaining sucuk fat, add diced onion and cook until softened, about 2 minutes. Add diced peppers and tomato, cook for another 3 minutes until softened.
- 3
Beat eggs in a bowl with salt and pepper. Push vegetables to the sides of the pan, add butter to the center, and pour in eggs. Gently scramble, mixing vegetables as eggs cook, about 4-5 minutes.
- 4
Return cooked sucuk to the pan and fold through the egg mixture. Cook for 1 more minute to heat through. Serve immediately with warm bread if desired.
