Ingredients

  • 250 g Beef sirloin
  • 250 g Cucumber
  • 250 g Cherry tomatoes
  • 120 g Romaine lettuce
  • 60 g Red onion
  • 25 g Fresh parsley
  • 10 g Fresh mint
  • 30 ml Lemon juice
  • 1 tbsp Olive oil
  • 2 tsp Sumac
  • 1 tsp Salt

Method

  1. 1

Take the 250g of beef sirloin out of the fridge so it cooks evenly, pat it dry and rub it with 1 tsp of the sumac and 1 tsp salt.

  2. 2

Dice the 250g of cucumber and the 250g of cherry tomatoes, shred the 120g of romaine lettuce, finely slice the 60g of red onion and chop the 25g of fresh parsley with the 10g of fresh mint.

  3. 3

Toss the cucumber, tomatoes, lettuce, onion and herbs with the 30ml of lemon juice, 1 tbsp olive oil and the remaining 1 tsp sumac, and set the bowl aside while the steak cooks.

  4. 4

Cook the steak in a dry griddle pan over high heat for 3 minutes a side, until a dark crust forms and the middle springs back with a light bounce.

  5. 5

Rest the steak off the heat for 3 minutes, slice it thinly across the grain and lay it over the dressed salad on two wide plates.
