Ingredients
- 300 g Turkey mince (lean)
- 300 g Broccoli
- 150 g Red bell pepper
- 150 g Canned tomatoes
- 80 g Onion
- 3 Garlic cloves
- 1 tsp Olive oil
- 1 tsp Smoked paprika
- 1 tsp Ground cumin
- 0.5 tsp Chilli flakes
- 10 g Fresh parsley
- 1 tsp Salt
Method
- 1
Cut the 300g of broccoli into small florets, dice the 150g of red bell pepper and the 80g of onion, crush the 3 cloves of garlic and chop the 10g of fresh parsley.
- 2
Warm 1 tsp olive oil in a wide pan over high heat and brown the 300g of turkey mince for 5 minutes, breaking it up as it goes, until no pink remains and the edges have caught colour.
- 3
Add the onion and garlic and cook for 2 minutes, then stir in 1 tsp smoked paprika, 1 tsp ground cumin, 0.5 tsp chilli flakes and 1 tsp salt and cook for 1 minute more, until the pan smells toasted.
- 4
Add the 150g of canned tomatoes, the diced pepper and the broccoli florets, cover the pan and cook over medium heat for 6 minutes, until the broccoli is tender to the point of a knife but still bright green.
- 5
Stir the chopped parsley through off the heat and eat hot from the pan, or split between two pots. It keeps 3 days chilled and reheats without the broccoli going grey.
