Ingredients
- 4 whole Egg
- 80 g Smoked salmon
- 80 g Sourdough bread
- 10 g Butter
- 40 g Spinach
- 10 g Chives, chopped
- 0.3 tsp Black pepper
Method
- 1
Pop the 80g sourdough bread in the toaster, then beat the 4 eggs with 0.25 tsp black pepper in a bowl.
- 2
Melt the 10g butter in a non-stick pan over medium-low heat and wilt the 40g spinach for 1 minute until just collapsed.
- 3
Pour in the beaten eggs and cook over low heat, folding slowly, for 3 minutes until just set but still soft.
- 4
Take the pan off the heat, fold through the 80g smoked salmon and 10g chopped chives so it barely warms, and pile onto the toast.
