Ingredients
- 100 g Red lentils
- 50 g Bulgur
- 3 stalks Spring onions
- 30 g Fresh parsley
- 15 g Fresh mint
- 0.5 tsp Paprika
- 1.5 tbsp Lemon juice
- 1 tbsp Olive oil
Method
- 1
Rinse the red lentils. Bring 300ml water to the boil in a pot, then add the lentils and bulgur.
- 2
Reduce to low heat and simmer for 15 minutes until the lentils are very soft and the water is absorbed. Drain any excess liquid and let cool slightly.
- 3
Finely chop the spring onions (white and light green parts), parsley, and mint. Set aside in a bowl.
- 4
In a large bowl, combine the warm lentil-bulgur mixture with the herb mixture. Add the paprika, salt, pepper, lemon juice, and olive oil, then knead together until well combined and pliable.
- 5
With wet hands, form the mixture into walnut-sized balls or oval patties and arrange on a platter.
- 6
Serve at room temperature with fresh lettuce, lemon wedges, and extra herbs on the side. These can be served immediately or chilled.
