Worked out from the ingredients. How we work out our numbers
Ingredients
- 4 whole Eggs
- 120 g All-purpose flour
- 40 g Butter
- 80 g Onion
- 10 g Green chilli
- 2.5 g Cumin
- 2.5 g Ground coriander
- 3 g Salt and black pepper
Method
- 1
Mix flour with a pinch of salt and 60ml of warm water to form a soft dough. Knead for 3-4 minutes until smooth. Rest for 10 minutes covered.
- 2
Finely dice onion and green chilli. Beat eggs in a bowl and mix in diced onion, chilli, cumin-coriander powder, salt, and pepper.
- 3
Divide dough into 2 portions. Roll each into a thin circle. Brush with melted butter, fold into quarters, then roll again into a thin sheet. Cook on a hot griddle for 2 minutes per side until golden brown and crispy.
- 4
Heat remaining butter in a non-stick pan over medium heat. Pour egg mixture and let it spread evenly. When edges set and center is still slightly wet on top, fold in half. Cook another 30 seconds and slide onto plate.
