Worked out from the ingredients. How we work out our numbers

Ingredients

  • 400 ml Whole milk
  • 200 ml Water
  • 6 g Loose black tea
  • 3 g Green cardamom pods
  • 8 g Fresh ginger
  • 1 g Whole cloves
  • 1 g Ground cinnamon
  • 14 g Caster sugar

Method

  1. 1

Crush the 3g of green cardamom pods and the 1g of whole cloves under the flat of a knife until the pods split, and grate the 8g of fresh ginger. The pods only give up their flavour once they are open, so this is worth the thirty seconds.

  2. 2

Put the 200ml of water in a small saucepan with the crushed cardamom and cloves, the grated ginger and the 1g of ground cinnamon. Bring it to the boil over high heat, then turn it down and simmer for 3 minutes, until the water has coloured and smells of the spices.

  3. 3

Add the 6g of loose black tea, which is about three tea bags' worth, and simmer over low heat for 2 minutes, until the liquid is a deep reddish brown.

  4. 4

Pour in the 400ml of whole milk with the 14g of caster sugar and bring it back up over medium heat for 3 minutes, until it rises up the side of the pan. Take it off the heat the moment it climbs, or it will boil over.

  5. 5

Strain through a small sieve into 2 cups, pressing the spices with the back of a spoon to get the last of it out. Serve straight away while it is hot.
