Ingredients
- 180 ml Egg whites
- 120 g Fresh spinach
- 2 Garlic cloves
- 2 Low-fat olive oil spray
- 2 g Salt and black pepper
- 5 g Fresh chives (optional)
Method
- 1
Roughly chop 120g fresh spinach and mince 2 garlic cloves. Pour 180ml egg whites into a bowl and whisk lightly with a pinch of salt and pepper.
- 2
Heat a non-stick pan with 2 sprays of olive oil over medium heat. Add minced garlic and cook for 30 seconds until fragrant. Add spinach and cook for 2 minutes until wilted.
- 3
Pour the whisked egg whites into the pan with the spinach. Let them sit undisturbed for 30 seconds, then gently push from the sides to the centre with a spatula.
- 4
Continue gently pushing the egg white mixture for 4-5 minutes until it reaches a fluffy, scrambled consistency. The eggs should be cooked through but not dry.
- 5
Taste and adjust seasoning with extra salt and pepper. Transfer to a plate and garnish with fresh chives if available.
