Ingredients
- 150 g Ripe banana
- 80 g Rolled oats
- 30 g Whey protein powder (or plant)
- 2 whole Eggs
- 60 ml Milk (dairy or plant-based)
- 15 g Honey
- 10 g Butter
- 3 g Baking powder
Method
- 1
Peel banana and mash with a fork until smooth. In a blender, combine mashed banana, eggs, milk, and honey until well combined and slightly frothy, about 1 minute.
- 2
In a separate bowl, combine rolled oats, protein powder, and baking powder. Stir until no lumps remain.
- 3
Pour wet ingredients into dry ingredients and stir gently until just combined. Do not overmix. Let batter rest for 2 minutes to hydrate oats.
- 4
Heat butter in a non-stick skillet over medium heat. Pour batter in ¼ cup portions. Cook for 3 minutes until edges set and bubbles form, flip, and cook another 2-3 minutes until golden. Serve warm.
