Worked out from the ingredients. How we work out our numbers

Ingredients

  • 50 g Chia seeds
  • 350 ml Whole milk
  • 20 g Maple syrup
  • 3 ml Vanilla extract

Method

  1. 1

The seeds need to soak for at least four hours in the fridge before this is ready, and overnight is better, so start it the evening before you want it. The work itself is two short stints at the counter with a wait between them.

  2. 2

Whisk the 50g of chia seeds, the 350ml of whole milk, the 20g of maple syrup and the 3ml of vanilla extract together in a jug for 1 minute, until no dry seeds are sitting on the surface.

  3. 3

Leave the jug on the counter for 10 minutes, then whisk it hard for another minute. The seeds will have started to gel and sunk into clumps, and breaking those up now is what gives you an even pudding.

  4. 4

Pour into 2 jars or bowls, cover them and put them in the fridge for the time set out in step 1. It is ready when a spoon stands up in it and no liquid is left loose at the bottom. It keeps for three days.
