Ingredients
- 50 g Tamarind paste
- 8 whole Medjool dates (pitted)
- 1000 ml Chilled water
- 2 tbsp Lime juice
- 0.5 tsp Ground cumin
- 1 pinch Salt
Method
- 1
Tear the 8 pitted Medjool dates into pieces and soak them in 200ml of the chilled water for 10 minutes, until the flesh has gone soft enough to break under a spoon.
- 2
Tip the dates and their water into a blender with 50g of tamarind paste, half a teaspoon of ground cumin and a pinch of salt. Blend for 45 seconds until you have a smooth, dark puree with no fibres left whole.
- 3
Pour the puree into a large jug, stir in the remaining 800ml of chilled water and 2 tbsp of lime juice, and whisk until it is even in colour.
- 4
Strain through a sieve into a clean jug, then chill and pour over ice. Stir before each pour, as the tamarind settles.
