Ingredients
- 300 g Ground lamb
- 100 g Onions
- 15 g Ginger
- 3 Garlic cloves
- 2 whole Green chillies
- 20 g Coriander leaves
- 30 g Pomegranate seeds
- 1 whole Egg
Method
- 1
Finely mince onion, ginger, garlic, and green chillies. Chop coriander leaves. Add all to ground lamb along with pomegranate seeds, salt, and pepper.
- 2
Add egg to mixture and knead gently until well combined and sticky. Let sit for 15 minutes to allow flavours to meld.
- 3
Divide mixture into 4 equal portions. Shape each into a flat patty roughly 10cm diameter and 1.5cm thick. Press pomegranate seeds into the surface.
- 4
Heat 2 tbsp oil in a frying pan over medium-high heat. Carefully place patties in pan and fry for 5 minutes per side until golden brown and cooked through.
- 5
Transfer to a plate and let rest for 2 minutes. Serve with sliced onion, lemon wedges, and mint chutney.
