Ingredients
- 300 g Beef
- 120 g Freekeh (roasted wheat)
- 120 g Yogurt
- 30 g Pistachio, chopped
- 100 g Onion, finely chopped
- 20 g Tomato paste
- 15 g Olive oil
- 10 g Parsley, chopped
- 1 tsp Cumin
- 0.5 tsp Cinnamon
- 1 tbsp Lemon juice
- 0.5 tsp Salt
Method
- 1
Rinse the 120g freekeh, cover it with plenty of water and simmer for 20 minutes until tender, then drain it.
- 2
Meanwhile, warm 15g olive oil in a frying pan over medium-high heat and fry the 300g beef for 6 minutes, breaking it up, until browned.
- 3
Add the 100g finely chopped onion, 20g tomato paste, 1 tsp cumin, 0.5 tsp cinnamon and 0.5 tsp salt and cook over medium heat for 4 minutes until the onion is soft.
- 4
Stir the drained freekeh through the beef so every grain picks up the spiced fat.
- 5
Divide between two bowls, spoon over the 120g yogurt and scatter with 30g chopped pistachio and 10g chopped parsley. Finish with 1 tbsp lemon juice.
