Worked out from the ingredients. How we work out our numbers
Ingredients
- 200 g Smoked salmon
- 420 g Brown rice (cooked)
- 170 g Avocado
- 80 g Fresh spinach
- 16 g Sesame seeds
- 15 ml Sesame oil
- 20 ml Lemon juice
- 40 g Spring onion
Method
- 1
Stir the 420g of cooked brown rice with 15ml of sesame oil and 20ml of lemon juice until every grain is glossy. Fridge-cold rice is fine here, because the dressing loosens it.
- 2
Shred the 80g of fresh spinach into ribbons and slice the 40g of spring onion thinly on the diagonal.
- 3
Cut the 200g of smoked salmon into wide ribbons. Halve, stone and slice the 170g of avocado.
- 4
Divide the dressed rice between 2 bowls, fold the shredded spinach through it, then lay the salmon and avocado on top. Scatter with the sliced spring onion and the 16g of sesame seeds.
