Ingredients
- 200 g Dried apricots
- 1000 ml Water
- 40 g Caster sugar
- 0.5 tsp Ground cinnamon
- 1 tsp Orange-blossom water
Method
- 1
Roughly chop the 200g of dried apricots so they will soften evenly.
- 2
Put the chopped apricots in a saucepan with 1000ml of water and half a teaspoon of ground cinnamon. Bring to a boil over high heat, then drop to low and simmer for 12 minutes, until the fruit collapses easily against the side of the pan.
- 3
Take the pan off the heat, stir in the 40g of caster sugar until it dissolves, and let it cool for 10 minutes. Blend for 45 seconds until completely smooth and glossy.
- 4
Stir through 1 tsp of orange-blossom water once the drink has cooled, then chill and serve over ice. Adding it cold keeps the scent from cooking away.
