Ingredients
- 800 g Lamb trotters
- 250 g Onions
- 30 g Ginger
- 8 Garlic cloves
- 2 whole Red chillies
- 1.5 tsp Coriander seeds
- 3 whole Cloves
- 1 whole Cinnamon stick
Method
- 1
Blanch lamb trotters in boiling water for 5 minutes to remove impurities. Drain and rinse well under cold water.
- 2
Slice onions thinly. Mince ginger and garlic. Heat 2 tbsp oil in a large heavy pot and fry onions for 15 minutes until deeply golden, stirring occasionally.
- 3
Add ginger, garlic, and red chillies to pot. Toast coriander seeds, cloves, and cinnamon stick in dry pan for 1 minute, then add to pot. Stir for 2 minutes until fragrant.
- 4
Add cleaned trotters to pot. Cover with water (about 1.5 litres). Add salt.
- 5
Bring to boil, then reduce heat to lowest. Cover and simmer for 1.5 hours until meat is falling off bones.
- 6
Remove trotters to serving bowls. Skim excess fat from broth if desired. Pour hot broth over trotters. Serve hot with naan or rice.
