Ingredients
- 300 g Turkey mince (lean)
- 250 g Bell pepper
- 200 g Cherry tomatoes
- 150 g Fresh spinach
- 100 g Onion
- 30 g Harissa paste
- 20 g Tomato paste
- 15 g Fresh parsley
- 20 ml Lemon juice
- 3 cloves Garlic
- 1 tsp Olive oil
- 1 tsp Cumin
- 1 tsp Smoked paprika
- 1 tsp Salt
Method
- 1
Slice the 250g of bell pepper into strips, halve the 200g of cherry tomatoes, dice the 100g of onion, crush the 3 cloves of garlic and chop the 15g of fresh parsley.
- 2
Heat 1 tsp olive oil in a wide skillet over high heat, add the 300g of turkey mince and press it flat, then leave it undisturbed for 3 minutes until the underside is properly browned before breaking it up.
- 3
Drop the heat to medium, add the diced onion, the garlic, the 30g of harissa paste, the 20g of tomato paste, 1 tsp cumin, 1 tsp smoked paprika and 1 tsp salt, and stir for 2 minutes until the paste darkens and coats the meat.
- 4
Add the pepper strips and halved tomatoes and cook over medium-high heat for 4 minutes, stirring twice, until the peppers soften at the edges but still hold a bite.
- 5
Stir the 150g of fresh spinach through in handfuls over medium heat for 1 minute until it collapses, take the pan off the heat, then finish with the 20ml of lemon juice and the chopped parsley.
