Ingredients
- 2 whole Pita bread
- 100 g Hummus
- 160 g Chickpeas, drained
- 100 g Cucumber
- 100 g Cherry tomatoes, halved
- 40 g Red onion, finely sliced
- 20 g Harissa paste
- 15 ml Lemon juice
- 10 ml Olive oil
- 12 g Fresh parsley, chopped
Method
- 1
Stir the 100g hummus with 20g harissa paste, 15ml lemon juice and 10ml olive oil until it is loose enough to spread without dragging.
- 2
Dice the 100g cucumber, halve the 100g cherry tomatoes, finely slice the 40g red onion and chop the 12g parsley, then toss them together.
- 3
Halve the 2 pita breads and open each half into a pocket, easing the layers apart with a knife so they do not tear.
- 4
Spread the harissa hummus inside each pocket, then pack in the 160g of drained chickpeas and the salad.
