Ingredients
- 300 ml Oat milk
- 40 g Dried apricots
- 15 g Flaked almonds
- 35 g Pea protein powder
- 3 whole Green cardamom pods
- 0.3 tsp Ground cinnamon
Method
- 1
Roughly chop the 40g of dried apricots and lightly crush the 3 green cardamom pods so they split.
- 2
Put the chopped apricots, the crushed cardamom pods, 300ml of oat milk and a quarter teaspoon of ground cinnamon in a small saucepan. Set it over medium-low heat and warm for 7 minutes, until the fruit is plump and squashes easily against the side of the pan.
- 3
Take the pan off the heat and lift out the cardamom pods. Pour the milk and apricots into a blender with the 15g of flaked almonds and 35g of pea protein powder, and blend for 45 seconds until completely smooth.
- 4
Pour into a mug and drink it warm. It keeps in the fridge for three days and reheats gently without splitting.
