Ingredients
- 450 g Chicken breast, cubed
- 0.5 g Saffron threads
- 60 ml Lemon juice, fresh
- 40 ml Oil
- 80 g Grated onion
- 4 g Salt and black pepper
- 150 g Tomato, halved
Method
- 1
Steep saffron in 2 tablespoons of hot water for 5 minutes. Mix saffron water with lemon juice, oil, grated onion, salt, and pepper in a bowl.
- 2
Toss chicken cubes in the marinade, ensuring all pieces are well coated. Cover and marinate at room temperature for 20-30 minutes (or up to 2 hours in the fridge).
- 3
If using wooden skewers, soak them in water for 15 minutes. Thread marinated chicken pieces onto skewers, alternating with halved tomatoes.
- 4
Heat a grill or grill pan to high heat. Grill skewers for 3-4 minutes per side, turning occasionally, until chicken is cooked through and charred at the edges.
- 5
Remove from grill and serve immediately over saffron rice, with charred tomatoes as garnish. Drizzle any remaining marinade over the top.
