Ingredients
- 2 whole Whole wheat tortilla (large)
- 240 g Turkey mince (lean)
- 200 g Black beans (tinned)
- 60 g Cheddar cheese (grated)
- 60 g Red onion, diced
- 30 g Tomato paste
- 1 tsp Smoked paprika
- 1 tsp Cumin
- 1 tbsp Vegetable oil
- 1 tsp Salt
Method
- 1
Heat 1 tbsp vegetable oil in a frying pan over medium-high heat and fry the 240g turkey mince with 60g diced red onion for 4 minutes, breaking the mince up, until it has lost its pink colour.
- 2
Stir in 30g tomato paste, 1 tsp smoked paprika, 1 tsp cumin, 1 tsp salt and the 200g of drained black beans, and cook for 2 minutes over medium heat until the paste darkens and coats everything.
- 3
Spoon the filling over half of each of the 2 tortillas, scatter 60g grated cheddar on top and fold each one closed.
- 4
Toast the folded tortillas in a dry pan over medium heat for 90 seconds a side, until both faces are marked and the cheese has run.
- 5
Slide onto a board, leave for 1 minute so the filling settles, then cut each into three wedges.
