Ingredients
- 150 g Red lentils
- 80 g Onion
- 3 Garlic cloves
- 15 g Ginger, grated
- 600 ml Vegetable broth
- 15 ml Olive oil
- 2 g Turmeric
- 2 g Cumin
- 3 g Salt and black pepper
Method
- 1
Heat olive oil in a pot over medium heat. Add diced onion and cook until softened, about 3 minutes. Add minced garlic and grated ginger, cook for 1 minute until fragrant.
- 2
Rinse red lentils under cold water and add to the pot. Pour in vegetable broth. Add turmeric and cumin. Bring to a boil.
- 3
Reduce heat to low and simmer uncovered for 20-25 minutes, stirring occasionally. Lentils will break down and create a thick, creamy porridge. Add water if needed for desired consistency.
- 4
Taste and adjust seasonings with salt and pepper. Serve hot in bowls, drizzled with a small amount of olive oil if desired.
