Ingredients
- 200 g Cornmeal (fine)
- 250 g Beef chuck, cubed
- 2 whole Onion
- 150 g Potato
- 3 Garlic cloves
- 3 tbsp Vegetable oil
- 800 ml Water
- 0.5 tsp Ground cumin
Method
- 1
Heat 2 tbsp oil in a large pot over medium-high heat. Add beef cubes and brown on all sides, about 8 minutes. Set aside.
- 2
Dice onions and potatoes. Mince garlic. Add remaining oil to pot and sauté onions and garlic until soft, 3 minutes. Return beef to pot and add water and cumin.
- 3
Add diced potatoes. Bring to boil, then reduce to simmer. Cover and cook for 30-35 minutes until beef is tender and potatoes are soft.
- 4
In a separate pot, bring 300ml water to boil. Slowly whisk in cornmeal while stirring to prevent lumps. Reduce heat to low and stir constantly for 10-12 minutes until thick and creamy. Spoon muufo onto plates and ladle stew over top.
