Ingredients
- 300 g Canned chickpeas
- 600 ml Vegetable stock
- 150 g Day-old bread
- 2 Garlic cloves
- 0.5 tsp Caraway seeds
- 2 tbsp Vegetable oil
- 1 tsp Harissa paste
- 1 pinch Salt and pepper
Method
- 1
Drain and rinse chickpeas. Break day-old bread into roughly 2cm pieces. Mince garlic. Have harissa paste ready.
- 2
Heat oil in a large pot over medium heat. Add minced garlic and caraway seeds. Toast for 1 minute until fragrant, being careful not to burn.
- 3
Add vegetable stock and drained chickpeas to the pot. Bring to a boil, then reduce heat and simmer for 5 minutes.
- 4
Stir in harissa paste until dissolved. Add bread pieces and continue simmering for 8 minutes, stirring occasionally, until bread breaks down slightly and soup thickens.
- 5
Taste and adjust salt, pepper, and harissa to preference. Ladle into bowls and serve hot. Some prefer it with a drizzle of olive oil on top.
