Worked out from the ingredients. How we work out our numbers
Ingredients
- 2 pieces Roti bread
- 100 g Onion
- 100 g Capsicum
- 2 whole Eggs
- 3 Garlic cloves
- 10 Curry leaves
- 1 tsp Curry powder
- 2 tbsp Vegetable oil
Method
- 1
Cut the cooked roti bread into thin strips and set aside.
- 2
Heat 0.5 tbsp oil in a wok over medium heat, then beat the eggs lightly and add to the wok. Scramble for about 1 minute until just cooked, then remove and set aside.
- 3
Mince the garlic and dice the onion and capsicum. Add the remaining oil to the wok over medium-high heat and fry the garlic and curry leaves for 30 seconds until fragrant. Add the onion and capsicum and cook for 2 minutes until softened.
- 4
Add the roti strips to the wok and sprinkle over the curry powder. Toss constantly over medium-high heat for 2 minutes, breaking up the roti pieces.
- 5
Return the scrambled eggs to the wok and toss over high heat for 1 minute to heat through. Serve hot.
