Worked out from the ingredients. How we work out our numbers
Ingredients
- 600 g Cucumber
- 15 whole Fresh mint leaves
- 4 tbsp Lime juice
- 40 g Caster sugar
- 700 ml Chilled water
- 1 pinch Salt
Method
- 1
Roughly chop the 600g of cucumber, skin on, into chunks a blender will manage. The skin is where most of the colour comes from. This needs to chill for an hour before serving, so start it early.
- 2
Put the chopped cucumber in a blender with the 15 fresh mint leaves, 4 tbsp of lime juice and a pinch of salt, and blend for 40 seconds until smooth and pale green.
- 3
Pass the blended cucumber through a sieve into a large jug, pressing the pulp with the back of a spoon, then stir in 700ml of chilled water and the 40g of caster sugar until the sugar dissolves.
- 4
Leave it in the fridge for at least an hour, then serve over ice. It keeps for three days, though it is best on the first two.
