Ingredients
- 4 whole Oranges
- 80 g Pomegranate seeds
- 1 whole Banana
- 40 g Pitted dates, chopped
- 1 tsp Orange-blossom water
- 5 g Fresh mint, chopped
- 15 g Shelled pistachios, chopped
Method
- 1
This is a fully no-cook salad, best assembled just before serving so the fruit stays bright. Chop the 40g of dates, plus the mint and pistachios, now so the rest comes together fast.
- 2
Peel 4 oranges and slice into rounds or segments, catching any juice in the bowl. Add the chopped dates and 80g of pomegranate seeds.
- 3
Slice 1 banana and fold it gently through the fruit, coating it in the orange juice so it stays fresh and pale.
- 4
Sprinkle over 1 teaspoon of orange-blossom water and toss lightly. Scatter with the chopped mint and pistachios and serve straight away.
