Ingredients

  • 350 g Lean beef sirloin
  • 40 g Unsalted butter
  • 1 tsp Mitmita spice blend
  • 2 Garlic cloves
  • 5 g Ginger
  • 100 g Injera bread
  • 80 g Fresh greens (collard or spinach)
  • 0.5 whole Lemon

Method

  1. 1

Use high-quality, very fresh beef sirloin. Finely mince the beef by hand or pulse briefly in a food processor, keeping the texture chunky rather than paste-like. Set aside on a clean plate.

  2. 2

Melt butter in a small pan. Mince garlic and ginger very finely and add to the butter. Cook for 1 minute until fragrant. Stir in mitmita spice and remove from heat.

  3. 3

If using raw collard greens, thinly slice them. Alternatively, blanch fresh greens in salted water for 2 minutes, drain well, and lightly sauté in a small amount of butter.

  4. 4

For raw kitfo: Mix minced beef gently with spiced butter and lemon juice. Serve immediately on injera. For lightly seared: Heat a heavy skillet over high heat and sear the beef mixture for 30 seconds per side until just browned on outside, meat remains pink inside.

  5. 5

Arrange injera on a plate. Top with kitfo mixture in the centre. Surround with fresh or cooked greens. Serve with additional lemon wedges on the side.
