Ingredients
- 300 g Lamb stew meat (or beef)
- 150 g Whole wheat grains
- 100 g Onion
- 30 g Ghee (or butter)
- 800 ml Beef broth (or lamb)
- 3 g Cinnamon
- 4 g Salt and black pepper
Method
- 1
Heat ghee in a heavy-bottomed pot over medium-high heat. Add diced onion and cook until golden, about 3 minutes. Add meat and brown all sides, about 8 minutes. Season with salt and pepper.
- 2
Pour broth into the pot. Rinse wheat grains and add to the broth. Stir in cinnamon. Bring to a boil, then reduce heat to very low.
- 3
Cover the pot partially with a lid and simmer very gently for 80-90 minutes, stirring occasionally to prevent sticking. The wheat and meat will gradually break down and create a creamy porridge.
- 4
When the mixture reaches a porridge-like consistency with no visible grains, taste and adjust seasonings. Serve hot in bowls with a drizzle of ghee on top if desired.
