Ingredients
- 250 ml Greek yogurt
- 120 g Pitted dates (Medjool)
- 80 g Granola
- 2 tbsp Raw honey
- 30 g Flaked almonds
- 100 g Fresh berries (optional)
- 0.5 tsp Ground cinnamon
Method
- 1
Pit and roughly chop 120g Medjool dates into bite-sized pieces. If very dry, soak briefly in warm water for 1-2 minutes to soften.
- 2
Spoon half of 250ml Greek yogurt into two serving glasses or bowls, dividing equally.
- 3
Layer half the chopped dates and half the 80g granola on top of the yogurt. Add the remaining yogurt, then top with the remaining dates and granola.
- 4
Drizzle 1 tbsp raw honey over each parfait. Scatter 30g flaked almonds and a pinch of ground cinnamon on top. Add fresh berries if available.
- 5
Serve right away while the granola is still crunchy, or chill for up to 2 hours before eating. The yogurt will soften the dates gently.
